I am currently working with Dr. Carol Glasser and a group of undergraduate researchers at Minnesota State University, Mankato (MNSU) to revise our original 2018 study. With the establishment of a student-run campus pantry and the continuing impact of the COVID-19 pandemic, the food and education landscape at MNSU has shifted greatly since our original inquiry, and I have been working on creating a measure to help capture this shift. Below is a working draft of the current survey tool, which we intend to field by the end of 2024.
